13  Mix all the dry ingredients together
14  add the oil
15  add the water slowly while kneading or using a stand mixer
16  keep kneading until the dough comes together (probably like 10 minutes in a stand mixer)
17  you can windowpane test to see if its good
18  let it rest, 1 hour
19  give it some clare saffitz turns every 30 minutes for 3 hours
20  let it proof in a proofing basket
21  bake!
22  30 - 40 minutes in a crock pot with lid, 10 - 20 minutes without
23  remove and let rest for 10 minutes
