22  - Cook the oil to ~40C
23  - add in the flavorings
24  - grate or peel the carrot to thin slices
25  - coat 'em in the oil

27  - let it ferment ~7 days

34  - cut the napa cabbage into quarters

36  - generously salt all the leaves
37  - massage every 20-30 minutes for 2 hours

62  - Bring 1ltr water to boil adding sugar as you go (don't let the sugar burn)
63  - Once all sugar added, bring temperature down to medium, add tea and steep for 20 minutes
